Rachel is a semi-hard, lightly brine washed cheese. It has a gentle flavour and nose, ideal for those who don’t like a strong, overpoweringly ‘goaty’ cheese.
Each cheese is handmade by Peter Humphreys at White Lake Dairy in Shepton Mallet, Somerset. Rachel was named after a friend of the maker – like the cheese she is sweet, curvy and slightly nutty.
