A Mediterranean twist on a traditional salami. Cornish Charcuterie Black Olive Salami is made with hand-chopped black olives. Visible pieces of olive add their own unique texture and flavour. Made to an Italian recipe with home reared Cornish Lop pork and Ruby beef. The meat is enhanced with herbs and spices before being gently smoked over beech chippings. The sausages are then left to mature for 10 days to 8 weeks, depending on size.
